Not much has been going on with us. We have been busy working and trying to get things put up that we brought back from Hutto. We got to stay home this weekend and it was so nice. We have not had a weekend to relax in a long time. We had our own Super Bowl Party just Scott and I since we don't know too many people here. Scott made some hot suce and I made a new dip. It turned out really good so I thought I would share.
Chicken Enchilada Dip
1 lb. skinless, boneless chicken breast halves
1 (8oz) package cream cheese, softened
1 (8oz) jar mayonnaise
1 (8oz) package shredded Cheddar Cheese
1 (4oz) can dieced green chile peppers
1 jalapeno pepper, finely diced
1. Preheat oven to 350 degrees. Place chicken on medium baking sheet. ( I boiled my chicken)
2. Bake in the preheated oven 20 minutes, or until no longer pink. Remove, cool, and shred.
3. Place shredded chicken in a medium bowl, and mix cream cheese, mayonnaise, Cheddar cheese, green chile peppers and jalapeno perrer. Transfer the chicken mixture to a medium baking dish.
4. Bake uncovered in the preheated oven 30 minutes, or until the edges are golden brown.
I also think it might be good with sasuage instead of the chicken.

That sounds good. I may have to try that. Don't feel bad about having your own Super Bowl Party...Jordan and I didn't even watch it. We had a work party...everyone thought we were so crazy!

That sounds pretty good. We did about the same thing. We are really big social bugs aren't we.
