Too Many Garden Veggies???

Scott and I planted a garden and we are just now starting to get squash and my parents have been keeping us loaded up on squash, zucchini, and okra. So this morning I blanched some zucchini and carrots and froze it for later, battered and froze squash and okra for frying. If you want to batter and freeze veggies for frying here is an easy way.

1 c. corn starch
1 c. corn meal
1/2 c. flour
salt to taste
2 tsp. baking powder
2 eggs
1 c. water

Mix dry ingredients in plastic bag
Mix water and egg in bowl.
Drop veggies in water mixture and then into dry mixture.
Shake and cover well.
Place on cookie sheet and put in freezer. Once frozen place in zip lock bag.

I froze a ton of stuff....but I hope it works, cause I didn't do it that way!

All of that sounds soooo good and it's only 7:14 a.m. I LOVE fried okra and squash!!!:)

Have you ever tried this? I have always breaded okra and frozen it but I have never had any luck with squash freezing or canning.

No I have never tried it but I looked it up on the internet.

I need to give this a try because I have soooo much squash in my ice box it is unreal. Go ahead a try a package and let me know how it turns out.
