I made this new recipe this weekend and really liked it.
1 lb. ground beef
1 lg. onion, chopped
1 sm. garlic clove, minced
1/4 tsp. salt
2 cups shredded cheddar cheese
1 can (10 3/4 oz.) cream of chicken soup
1 pkg. (8oz.) Velveeta cheese, cubed
3/4 c. evaporated milk
1 can (4 oz.) chopped green chilies, drained
1 jar (2 oz.) diced pimientos, drained
12 corn tortillas
1/4 c. canola oil
In large skillet, cook beef, onion, garlic and salt over medium heat until meat is no longer pink. Stir in cheddar cheese; set aside.
Meanwhile, in large saucepan, cook and stir the soup, process cheese, and milk over medium heat until cheese is melted. Stir in chilies and pimientos. ( I did not use pimientos because I don't like them.
In large skillet, fry tortillas, one at a time in oil for 5 sec. on each side. I just used cooking spray and cooked them until they softened up. Drain on paper towel. Place scant 1/4 cup of reserved meat mixture down center of each tortilla. Roll up and place seam side down on greased 13x9 in. baking dish. Pour cheese sauce over top. Cover and bake at 350 degrees for 25-30 min. or until heated through.

Ear Infection and Still Happy
Cooper has not been eating well the last couple of days. We did not know what was wrong because he never cried or was fussy. He woke up about three times last night crying. I told Scott maybe he has an ear infection. We took him to the Saturday clinic they have in Waxahachie and sure enough he has an infection in the right ear. This is his 3rd one and there is nothing you can do to prevent them. Despite the pain he is still happy and laughing.

Productive Weekend
We had a very productive weekend. We woke up Saturday morning and Scott cooked french toast. Yum!!! We got dressed and headed to town. We had a few things to get before we could get to work around the house. We went to Lowe's and got Cooper a fan and Scott put it up. I have never seen a black fan before but we got one. Maybe it won't show dust too bad. I got some paint for the baseboards and painted them tonight. Scott got the yard all mowed and sprayed for weeds.

I really like it alot!!!

We also went to Hobby Lobby and got a frame for Coopers picture. I absolutely love this picture and am so glad to finally hang it up. By the way the picture is hung strait on the wall, I just had the camera crooked when I took it I guess.

Then most importantly we got to spend some time playing with Cooper. I thought these pictures were cute of Cooper gnawing on Scott's ear. He loves to grab your hair and bite on anything he can get his mouth on.

Cooper loves to drink water out of a cup. He tries to grab your cup anytime you get a drink.
Cooper is sitting up now! He still tumbles over sometimes.

Great Wolf Lodge
The Johns family came down for spring break. Yesterday we went shopping since Abilene does not have many stores. It was so cold and rainy. By the evening the kids were getting tired so we dropped Whitney off at Steinmart and Jason and I took the kids home. Jason helped get them a bath and then went and picked Whitney back up. They were all asleep when they got back. They were tired and all slept until 8:30 this morning. Scott had to work so the Johns family, Cooper, and I headed to Grapevine to the Great Wolf Lodge. This place is awesome! It is an indoor water park and lodge. We had a blast and all the kids loved it. Needless to say we were all tired when it was time to go. Cooper fell asleep pretty quick in the car on the way home and slept the whole hour home. That is unsusual for him to sleep in the car so well. I gave him a bath when we got home at about 6 and he was ready for bed. Thanks for coming down. We are so glad we got to spend time with you all. We have not seen them since Christmas.
